I love a recipe that literally takes 5mins...especially when it tastes as great as this. I don't really like following a 'plan', but like to scan the pantry and fridge for options to add. My advice to you, just trial and error with flavours till you get it right!
Our kids are not fussed on couscous so I substituted leftover rice for them.

This such a yum salad, fill of colour, flavours and textures. Use whichever vegetables are in season or a selection that you know will be popular. The vegetable prep is a bit tedious and time consuming (I quadrupled this recipe for an event and there was a lot of chopping) but the outcome was worth it.
