Creative Couscous with lamb shanks
On the table in 5mins!
I love a recipe that literally takes 5mins...especially when it tastes as great as this. I don't really like following a 'plan', but like to scan the pantry and fridge for options to add. My advice to you, just trial and error with flavours till you get it right!
Our kids are not fussed on couscous so I substituted leftover rice for them.
Serves 2 adults
1/2 cup couscous + 1/2 cup boiling water and drizzle olive oil.
(combine in shallow dish and cover, sit for 3-4 mins, fork to fluff).
Chopped spinach (lots)
Finely diced red onion
handful sultanas (or cranberries/raisins/apricots)
If my fridge was better stocked I would have added diced capsicum, raw brocolli, tomatoes...
Drizzle over lemon juice and olive oil.
Serve with some meat; we used the new Hinterland heat and eat lamb shanks which were divine!. You could use chicken, meat balls, sliced lean sausages, fresh or canned salmon or tuna, haloumi or tofu...
