Rubix Banana Loaf

This is perfect for a mid-morning or afternoon snack!

  • 2 egg
  • 6 Tbsp oil
  • 4 large mashed bananas (I use frozen, defrosted, or very ripe)
  • 1/2 cup brown sugar or similar
  • 1 tsp vanilla essence
  • 3 cups flour
  • 3 tsp baking powder
  • 1/2 tsp baking soda
  • 4 Tbsp milk
  • Optional:
  • 2Tbsp cocoa (if using, omit ¼ flour)
  • 1 tsp cinnamon
  • ¼ cup chocolate drops
  • ¼ cup walnuts

Coconut & seeds for sprinkling on top

Simply mix first 5 ingredients together with a fork or beater. Add dry ingredients (and any optional ingredients) and mix gently until combined, adding a good splash of milk to wet the mixture. Spoon into a loaf tin (or tin of choice) lined with baking paper (or greased) and bake at 180deg until golden brown and skewer comes out clean sd airport transport. Check towards end of cooking time in case you have an extra hot oven! Better to slightly undercook then over.

  • 15-20min for large muffins
  • 25-30min for small loaf tin (half recipe)
  • 35-45min for double-recipe loaf/cake
