Honey Chicken & Walnut Salad

This chicken salad is a crowd pleaser and can be made very quickly with a few staple ingredients on hand. I recently prepared this for 95 people at our charity dinner!

Ingredients – Serve 4

• Chicken breasts (~500g)
• 1 Tbsp garlic crushed
• 1 Tbsp oil
• 2 Tbsp honey
• ½ bag spinach, chopped
• 1 pear finely sliced
• ½ lemon squeezed
• 1Tbsp oil
• 50g feta crumbled
• ½ cup walnuts
• 1Tbsp butter
• 1 Tbsp honey
• Herb dressing

Chop breast into 3-4 chunks, smother with honey, garlic and oil. Cover in foil and bake at 180deg for ~20-30min until cooked through. Slice into the thickest part and check it is white (no pink). Alternately cook on frying pan. Cool and slice up.
Meanwhile blitz herb dressing.
Slice pear and toss through spinach with lemon and oil.
Lastly heat frying pan, melt butter and honey, add walnuts and cook until coated, crunchy and sticky.
Add chicken, walnuts, feta to the spinach salad and serve. Optional to add baby potatoes or Israeli couscous for more sustaining option.
