It’s summer time which means delicious salad season is in! This pasta salad is a great dish to have during the week, at a BBQ in the weekend, or even on Christmas day. It’s full of flavour, colour, and most importantly, it’s simple to make!
Ingredients:
- 250g of wholemeal pasta (portion size will differ with how many people you are serving for)
- 2-3 Tbsp of basil pesto
- Feta (your choice of how little or how much you want to add)
- A couple of handfuls of spinach
- 1/2 red onion, diced
- 1 punnet of cherry tomatoes, halved
- 2-3 Tbsp of pinenuts (or walnuts/cashews), lightly roasted
Method:
- Cook wholemeal pasta
- In the meantime, cut tomatoes, feta, and red onion
- Once the pasta is drained, stir in the basil pesto and set aside for 10mins
- Roast pinenuts for a few minutes on a pan until coloured
- Add in the spinach, feta, red onion and tomatoes and stir through the pasta
- Serve in a bowl and sprinkle pinenuts on top
