It’s Easter which means hot cross bun time! Why don’t you try something different this year and give our hot cross muffins a go! Healthy, packed full of energy and most of all, DELICIOUS!
Ingredients:
- ¼ cup oil
- 1 egg
- ½ cup milk
- ¼ cup dried fruit e.g. raisins, cranberries
- 2 small or 1 large banana mashed
- 1 cup wholemeal or plain flour
- 1 tsp baking powder – 1 tsp cinnamon
- ¼ cup oats or 1 weetbix
- 1/2 cup icing sugar
- 2 tsp water
Instructions:
- Mix wet ingredients together and using a fork mix through dry ingredients until just combined.
- Spoon into muffin tins with paper cases. Bake at 180deg for 15mins until a knife goes through clean and they spring back lightly with touch.
- Let the muffins cool down while mixing icing sugar and water to make an icing. Place in a small plastic bag. Cut 1 corner off the bag and begin pipping a cross on each muffin.
