Cozy Comfort Carrot Cake

INGREDIENTS 

  • 3 large eggs
  • 1 cup sugar
  • ¾ cup melted butter or coconut oil
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground ginger
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon salt
  • 2 cups grated carrots
  • ¾ cup natural Greek yogurt
  • ½ cup chopped Walnuts or other nuts
  • ½ cup shredded coconut

METHOD

  1. Preheat the your oven to 175°C. Grease and line a round cake pan with parchment paper.
  2. In a large bowl, beat the eggs and sugar together until well combined.
  3. Add the melted butter and mix until smooth.
  4. In another bowl, whisk together the all-purpose flour, baking powder, baking soda, cinnamon, ginger, nutmeg, and salt.
  5. Gradually add the dry ingredients to the wet mixture, stirring just until combined.
  6. Fold in the grated carrots, Greek yogurt, chopped walnuts, and shredded coconut.
  7. Pour the batter into the prepared cake pan.
  8. Bake for 40-45 minutes or until a toothpick inserted into the center comes out clean.
  9. Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

CREAM CHEESE ICING

  1. In a medium bowl, beat the cream cheese and butter together until smooth and creamy.
  2. Gradually add the powdered sugar, beating until light and fluffy
  3. Mix in the vanilla extract and 1/2 tsp lemon zest.
  4. Once the cake is completely cool, spread the cream cheese frosting evenly over the top.
  5. Optionally, garnish with additional chopped walnuts or shredded coconut.
  6. Cut a slice and enjoy!

NOTES

  • Using Greek yogurt will add a creamy texture and a hint of tanginess to the cake, enhancing its overall flavour.
  • The inclusion of cinnamon, ginger, and nutmeg provides warm, comforting flavours that are perfect for cold weather.
  • Carrots add a dose of vitamins, especially vitamin A, which can be beneficial during the winter months when fresh produce may be less abundant.
