Rubix Granola

Our Rubix Granola is the perfect blend of crunch and flavour, packed with wholesome ingredients to fuel your day. This recipe features our ingredient of the month—almonds—along with a mix of coconut, cinnamon, chia seeds, sunflower seeds, walnuts, and a touch of honey for natural sweetness.

Whether you’re looking for a quick breakfast, a healthy snack, or a crunchy topping for yogurt or smoothie bowls, this granola has you covered. It’s easy to make, loaded with nutrients, and utterly delicious!

Ingredients:

  • 1 pack Pam’s coconut thread (only contains 100% coconut!)
  • 1.5 cups raw nut mix e.g. walnuts, brazil, almond, hazelnut
  • 1 cup mixed pumpkin, sunflower and sesame seeds
  • 2 Tbsp chia seeds
  • 1 tsp cinnamon
  • 2-3 Tbsp rice bran or coconut oil
  • 2-3 Tbsp honey or pure maple syrup
  • Optional: add rolled oats, puffed rice or quinoa flakes for extra carbohydrates and fibre

Method:

  1. Pre-heat the oven to ~150°C. Line a large baking tray with baking paper.
  2. Mix the dry ingredients together in a large bowl.
  3. Heat together the coconut oil and honey/ syrup over a low heat.
  4. Pour the liquid ingredients into the dry ingredients and mix thoroughly together.
  5. Pour out onto the prepared tray and bake for ~10-15 minutes or until golden and cooked to your liking. Watch like a hawk once the coconut starts browning
  6. Leave to cool before transferring to a sealed container.

Notes:

  • You can enjoy this granola with fresh fruit or fruit compote, and Greek yogurt/milk.
  • Feel free to mix in your favourite dried fruits, such as raisins or cranberries, after baking for an extra burst of flavour.
  • Use certified gluten-free oats if you’re sensitive to gluten.
  • Let the granola cool completely on the baking sheet before breaking it into clusters for a crispy texture.
  • Seeds like chia and pumpkin are rich in nutrients, with chia providing omega-3s and fibre for digestive and heart health, and pumpkin seeds offering magnesium for muscle and bone health.
  • A mix of nuts provides heart-healthy fats, antioxidants, and vitamins, with walnuts offering omega-3s that reduce inflammation and boost brain function.
