Summer Quinoa Salad

This Summer Quinoa Salad is the perfect light and refreshing dish for summer! Packed with seasonal veggies like cherry tomatoes, cucumber, and red capsicum, this salad bursts with fresh, vibrant flavours. Topped with a zesty lemon dressing and fresh herbs, it’s a simple, nutrient-packed dish that’s both satisfying and delicious.

Ingredients

  • 1 cup cooked quinoa (about 1/3 cup uncooked)
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red capsicum, diced
  • 1/4 cup red onion, finely diced
  • 1/4 cup walnuts, roughly chopped (or sunflower seeds for a nut-free option)
  • Zest and juice of 1 lemon
  • 2 tablespoons olive oil
  • A handful of fresh herbs (basil, mint, or parsley), roughly chopped
  • Salt and pepper to taste
  • OPTIONAL: 1/2 avocado, diced
  • OPTIONAL: 1/4 cup crumbed feta

Instructions

  1. Rinse the quinoa under cold water, then cook according to the packet instructions. Let it cool completely to prevent it from clumping in the salad.
  2. While the quinoa is cooling, prepare the cherry tomatoes, cucumber, capsicum, onion, avocado (if using), and any additional ingredients.
  3. In a large mixing bowl, combine the cooled quinoa, chopped vegetables, walnuts (or seeds), feta (if using) and herbs.
  4. In a small bowl, whisk together the lemon zest, lemon juice, olive oil, salt, and pepper. Pour over the salad and toss everything gently to coat evenly.
  5. Garnish with extra herbs or seeds if desired. Serve chilled or at room temperature.

Notes: 

  • Let the quinoa cool completely before mixing it with the veggies to prevent it from becoming soggy. Spread it out on a plate or tray for faster cooling.
  • This salad tastes even better after a few hours as the flavors meld together. Prep it the night before for a quick, ready-to-eat meal.
