Fresh Autumn Mingle
This Autumn Mingle Salad is a vibrant, seasonal dish full of fresh vegetables, crunchy pumpkin seeds, and a zesty lemon-maple dressing. It’s the perfect way to enjoy autumn’s rich flavors while boosting your fiber and nutrient intake—whether as a light lunch or a flavorful side.
Salad Ingredients
- 1 tin chickpeas, drained and rinsed
- 1 cup shelled edamame beans, cooked
- 1 large carrot, grated
- 1 cup cucumber, halved and sliced
- 1 cup red capsicum, finely sliced
- 2 cups baby spinach or mesclun lettuce
- 1/2 cup green olives (or sundried tomatoes)
- 1/4-1/2 cup pumpkin seeds
- 1/2 cup beetroot, grated
Lemon Dressing:
- 2 tbsp oil
- 1 clove garlic
- 1/2 tsp ground cumin
- 1/4 tsp salt
- 2 tbsp lemon juice
Method:
- Prepare all vegetables and put in a large bowl (except beetroot)
- In a cup mix lemon dressing ingredients
- Add the dressing and gently combine.
- Briefly mix in the beetroot and serve.
Notes:
- Mix in the beetroot just before serving to prevent it from colouring the entire salad.
- Feel free to mix and match veggies based on what’s in season – this keeps the salad fresh and budget-friendly!
