Summer pesto pasta salad

It’s summer time which means delicious salad season is in! This pasta salad is a great dish to have during the week, at a BBQ in the weekend, or even on Christmas day. It’s full of flavour, colour, and most importantly, it’s simple to make!

Ingredients:

  • 250g of wholemeal pasta  (portion size will differ with how many people you are serving for)
  • 2-3 Tbsp of basil pesto
  • Feta (your choice of how little or how much you want to add)
  • A couple of handfuls of spinach
  • 1/2 red onion, diced
  • 1 punnet of cherry tomatoes, halved
  • 2-3 Tbsp of pinenuts (or walnuts/cashews), lightly roasted

Method:

  1. Cook wholemeal pasta
  2. In the meantime, cut tomatoes, feta, and red onion
  3. Once the pasta is drained, stir in the basil pesto and set aside for 10mins
  4. Roast pinenuts for a few minutes on a pan until coloured
  5. Add in the spinach, feta, red onion and tomatoes and stir through the pasta
  6. Serve in a bowl and sprinkle pinenuts on top
