INGREDIENTS
- 3 large eggs
- 1 cup sugar
- ¾ cup melted butter or coconut oil
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- ½ teaspoon ground ginger
- ¼ teaspoon ground nutmeg
- ¼ teaspoon salt
- 2 cups grated carrots
- ¾ cup natural Greek yogurt
- ½ cup chopped Walnuts or other nuts
- ½ cup shredded coconut
METHOD
- Preheat the your oven to 175°C. Grease and line a round cake pan with parchment paper.
- In a large bowl, beat the eggs and sugar together until well combined.
- Add the melted butter and mix until smooth.
- In another bowl, whisk together the all-purpose flour, baking powder, baking soda, cinnamon, ginger, nutmeg, and salt.
- Gradually add the dry ingredients to the wet mixture, stirring just until combined.
- Fold in the grated carrots, Greek yogurt, chopped walnuts, and shredded coconut.
- Pour the batter into the prepared cake pan.
- Bake for 40-45 minutes or until a toothpick inserted into the center comes out clean.
- Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
CREAM CHEESE ICING
- In a medium bowl, beat the cream cheese and butter together until smooth and creamy.
- Gradually add the powdered sugar, beating until light and fluffy
- Mix in the vanilla extract and 1/2 tsp lemon zest.
- Once the cake is completely cool, spread the cream cheese frosting evenly over the top.
- Optionally, garnish with additional chopped walnuts or shredded coconut.
