Energy Bites

These energy bites are the perfect addition to your or your kids’ lunchboxes, providing a satisfying and nutritious snack. Packed with rolled oats, nut butter, seeds, and dried fruit, they offer a great mix of complex carbs, healthy fats, and protein, delivering long-lasting energy to keep you fueled throughout the day. They’re easy to make, fully customizable with add-ins like cinnamon, and adaptable for nut-free diets. Whether you need a quick snack, post-workout boost, or something to curb hunger, these bites are a delicious and convenient choice!

Ingredients

  • 1 cup rolled oats
  • 1/4 cup nut butter (peanut butter or almond butter)
  • 1/4 cup honey
  • 1/4 cup seeds (sunflower, pumpkin etc)
  • 1/4 cup dried fruit (raisins, cranberries)
  • 1/4 cup coconut

Method

  1. Simply mix all ingredients together!
  2. Wet hands and roll into balls, squeezing firm.
  3. Chill the balls for 30min and then enjoy!

Notes

  • If you are allergic to nuts – don’t worry!! You can substitute the nut butter for 1/3 cup of applesauce or mashed banana or 1/4 cup of sunflower seed butter or coconut butter.
  • These energy bites are adaptable – feel free to add or swap ingredients! you can mix in different nuts, cinnamon, vanilla or cocoa powder for extra flavour.
  • If the mixture is too moist, add more oats or coconut. If the mixture is too dry, add a little more nut butter.
  • Refrigerating the energy bites after rolling makes them less sticky and helps the flavours meld together. If your mixture is sticky, you can pop it in the fridge for 10-15min before rolling.
  • You can keep them in a airtight container for up to a week or freeze for a longer shelf life!
