Creative Couscous with lamb shanks

On the table in 5mins!

I love a recipe that literally takes 5mins…especially when it tastes as great as this. I don’t really like following a ‘plan’, but like to scan the pantry and fridge for options to add. My advice to you, just trial and error with flavours till you get it right!

Our kids are not fussed on couscous so I substituted leftover rice for them.

Serves 2 adults

Ingredients:

  • 1/2 cup couscous
  • 1/2 cup boiling water and drizzle olive oil.
  • Chopped spinach (lots)
  • Finely diced red onion
  • Crumbled feta
  • Handful sultanas (or cranberries/raisins/apricots)

If my fridge was better stocked I would have added diced capsicum, raw broccoli, tomatoes…

Drizzle over lemon juice and olive oil.

Instructions:

  1. Combine couscous and water in a shallow dish and cover
  2. Sit for 3-4 mins,
  3. Fork to fluff.
  4. Serve with some meat.

We used the new Hinterland heat and eat lamb shanks which were divine! You could use chicken, meatballs, sliced lean sausages, fresh or canned salmon or tuna, halloumi or tofu…
