Ingredients:

  • 4 ripe avocados, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, finely diced
  • 1 jalapeño, seeds removed and finely chopped
  • 1/2 cup fresh cilantro, chopped
  • Juice of 2 limes
  • Salt and pepper to taste
  • 1 cup corn kernels (fresh or thawed if frozen)
  • 1 cup black beans, drained and rinsed
  • 1 cup cucumber, diced
  • 1 cup red bell pepper, diced
  • 1 cup feta cheese, crumbled (optional)
  • Tortilla chips for serving

Instructions:

  1. Prepare the Ingredients:
    • Begin by dicing the avocados and placing them in a large mixing bowl.
    • Halve the cherry tomatoes, finely dice the red onion, and chop the jalapeño and cilantro.
    • Add the tomatoes, red onion, jalapeño, and cilantro to the bowl with the avocados.
  2. Squeeze in the Citrus:
    • Drizzle the juice of two limes over the vibrant medley in the bowl. The lime essence will add a refreshing zing to the salad.
  3. Season and Mix:
    • Sprinkle in salt and pepper to taste. Gently toss the ingredients together, ensuring a delightful combination of textures and colors.
  4. Add Fresh Vegetables:
    • Fold in the corn kernels, black beans, diced cucumber, and red bell pepper. These fresh additions will elevate the flavors of the guacamole salad.
  5. Optional: Feta Cheese:
    • Consider adding crumbled feta cheese for a creamy and salty note. While optional, it contributes an extra layer of flavor to the ensemble.
  6. Chill and Let Flavors Marinate:
    • Cover the bowl with plastic wrap and allow the salad to chill in the refrigerator for at least 30 minutes. This marinating time is crucial for a harmonious fusion of flavors.
  7. Serve with a View:
    • As the sky paints hues of orange and pink, unveil the chilled guacamole salad on a vibrant platter. Surround it with crispy tortilla chips, creating an inviting display.
  8. Enjoy the Kiwi Summer Evening:
    • Invite your loved ones to join you in savoring the Kiwi Summer Evening Guacamole Fiesta. Let the vivid colors and fresh, bold flavors transport everyone to the heart of a Mexican celebration, right in the midst of a beautiful New Zealand summer night.
